Over the past seven years, chef Jesse Houston (formerly of Parlor Market and City Grocery) has become an oyster expert, researching the local history with mollusks and studying the subtle differences in flavor and preparation of the beloved bivalves from coast to coast. He chose to move back to Jackson to rejuvenate the local oyster scene and bring it back to its former glory by opening Saltine in August. Named as a nod to the plain cracker often served with seafood, Saltine pays homage to Jackson’s rich history with oysters. The 100-seat oyster bar, located in a former school, focuses on Southern cuisine highlighting fresh seafood and seasonal vegetables to share. Oysters are sourced from the Gulf of Mexico, east and west coasts and Canada and served raw, smoked, wood-fired and fried. Houston works with regional brewers to create frequent proprietary craft beers, including a brew made with oyster shells, as well as use a Randall system to make custom-infused drafts on-site.
