Tucked behind the kitchen of the iconic Brent's Drugs diner in Fondren,The Apothecary at Brent's Drugs is Jackson's original classic cocktail bar, open since 2013. Named one of "The South's Best Bars" by Southern Living and one of "America's 50 Best Bars" by Esquire, the bar pulls from the soda fountain tradition with fresh juices and house-made ingredients in updated versions of classic cocktails. The same kitchen behind Brent's diner fare also serves up elevated small plates late into the night.

Open until 2 am on Fridays and Saturdays and midnight the rest of the week, Fondren Public is now under new ownership from Jimmy and Jessica Quinn, who've kept its laid-back neighborhood soul intact. The bar's drink program is getting a light polish, with rotating taps, an elevated wine list and sharper cocktails that stay approachable and affordable. Food is now a weekly rotation, served 6–10 pm: $10 Burger Night on Mondays, $3 Chicken Carnitas Tacos on Tuesdays, and $1.50 WAAANGS on Thursdays (Buffalo, Lemon Pepper, and BBQ). Pizzas are also available during regular hours. Shuffleboard, cornhole and other bar games are still on hand for anyone looking to make a night of it.

Jackson's newest late-night cocktail bar, The Walk-In blends Southern comfort with Asian-inspired flavors under Chef Damien Cavicchi. The menu is built for sharing, anchored by the pupu platter — crab rangoon, char siu pork belly, egg roll, duck meatloaf skewers and honey walnut shrimp. Other standouts include black garlic deviled eggs, tamale egg fried rice, gochujang pimento cheese, and a bulgogi grilled cheese made with four pull-apart Hawaiian roll sliders. The cocktail list leans just as playful, with drinks like the Gillman's Return (gin, kiwi syrup, St. Germain, lime), the Jalisco Helicopter (reposado tequila, Aperol, Amaro Nonino, lemon, hellfire bitters), and the Money in the Banana Stand (Cathead vodka, crème de banane, chocolate liqueur).

A family-run taco spot since 2015, Green Ghost Tacos serves up handmade tortillas and original recipes from a family in San Luis, Mexico. Late-night hours come with live DJs, dance parties and themed late-night events on top of the birria tacos, elotes and queso the spot is known for.

Made for the late eater, Chef Esco Kitchen keeps nocturnal hours. Owner Adrian Esco, known as "the Lamb God," built the menu around his signature lamb chops, alongside ribeye, grilled salmon, sautéed Creole shrimp and his special pasta, every entrée cooked to order on the grill. Esco honed his technique working through metro-area kitchens like Local 463 and Anjou before opening his own late-night spot for the after-hours crowd.
